Alternative To Cream Cheese

I love Greek Strained Yogurt! I think it makes a perfect alternative to cream cheese. Don't get me wrong, I love cream cheese. But sometimes it can be too rich to have in the morning. Greek yogurt has a similar texture, but it's not nearly as rich. Plus, it has more of a tangy flavor which can compliment jams and honey's really well!

Homemade Greek Yogurt!

Greek Strained Yogurt

1 container of plain yogurt

Take a strainer and line it with a clean, thin, kitchen towel. Place yogurt inside the towel lined strainer and use the towel to cover the yogurt. Place strainer on top of a bowl and let strain over night. You can place the bowl and strainer in the fridge, or just leave it on your kitchen counter. The next morning discard the liquid that has accumulated in the bowl, and scrape the Greek yogurt out of the towel and place in a plastic tupperwear container. Use the yogurt as a spread over toast, on crackers, with vegetables, etc. I love having it on toast with a bit of honey, or on toast with some jam! Yum!

Strain the yogurt through a coffee filter and you won't have to wash so many towels.

Whoa! Don't throw away that lovely whey! It's a healthful liquid to use in breadmaking or smoothies or many other foods.
