Egg In A Basket Recipe

Talk about simple. This delicious breakfast is THE definition of simple. What I like about this breakfast is that it combines two of my favorite breakfast foods, eggs and toast, into one glorious breakfast treat.
I hesitate to even call this a recipe. All you do really is heat up some olive oil in heavy bottom pan. Take a slice of sourdough bread and cut a circle out of the center. Place the bread in the pan. Let it grill for a minute before you crack an egg in the center. Sprinkle with salt and pepper and remove from pan when done to your taste. (I personally like my eggs over medium) And voila! A simple and rustic breakfast that can be endlessly modified. I'm thinking some sliced prosciutto over top the next time I make this!

I swear to you I made this for breakfast this morning, BEFORE I saw this. I made mini lamb burger sliders and I had 12 pieces of nice bread with cookie cutter holes in the middle. Well I never throw food away, and this morning all those bread slices with holes in them were screaming "use me" , and I did this! Not as pretty as your so it won't make the blog. Besides now I would just be copying catting you...GREG
I love that Greg! Our taste buds are psychically connected!
I knew yours was prettier than mine. I saw it on TasteSpotting! GH
You have such a gorgeous blog!!!
I tried to make this "recipe" about a year ago and totally burned it! Maybe it's time for another attempt?
PS Also really enjoy your Food Bloggers Unite Blog (my sister told me about it): I'm already using your alt=" " hint! Thank you!
I stumbled across your blog and have been going backwards through old posts. My wife first told me about doing this, except that in her version the hole you cut is just big enough for the yolk, so that when you flip the whole thing you have bread with a yolk "eye" looking at you. She calls it "One Eyed Egyptians" for reasons that are lost to obscurity.
