My mom makes these ALL of the time. They act as a perfect condiment and topping to many of her best dishes.
Red onions have a mild bite with sweet overtones that get enhanced by the lemon. I got the idea to make these from Top Chef actually. I kept noticing many of the chefs making interesting pickled slaws as toppings and that totally reminded me of my mom's marinated red onions!
All you do is slice some red onions into rings. Spread onion rings into a shallow dish and squeeze enough lemon juice to cover most of the onions. That's it! You should probably let them marinate for about an hour....the longer they marinate, the milder the "onion" flavor, and the more tart they become. Right before serving them, sprinkle them with salt.
These are great over many mexican dishes because they have a sweet, tangy, bright flavor...try them over enchiladas, on tacos, anything really. They work especially well on savory dishes.

Hi, great idea but I am Mexican and all that lemon juice is not necessary. I will give you my own recipe, which I use very often with many dishes such as tacos, enchiladas, quesadillas, etc. Slice red onions and put them in a bowl, cover with boiling water, add the juice of 1 lemon per onion or add as much white vinegar as you like, and finish with a touch of dried oregano. Let stand for about an hour or until is cool.
Oh, sorry, I forgot to mention the pinch of salt and pepper.
