Banana Bread Recipe With A Twist

I love having a slice of banana bread with coffee for breakfast! It's a bit indulgent which is probably why I love it so much. I've always liked banana and coffee as a flavor combination so I decided to modify my classic banana bread recipe and include a walnut coffee crumble on the top. The results were fantastic!

Banana Bread with Walnut Coffee Crumble

3 or 4 ripe bananas, smashed
1/3 cup softened un-salted butter
1 cup sugar (can easily reduce to 3/4 cup)
1 egg + 1 additional egg yolk
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cup of flour

For Crumble

1/2 Cup of walnuts
2 Tbls Brown Sugar
2 Tbls Flour
2 Tbls Cold Butter
1 Tsp instant Coffee

Pre-heat oven to 350 degrees. Cream butter with sugar in a bowl until light and fluffy. Slowly add the eggs and vanilla and mix just until blended. Add bananas and mix. Once bananas are mixed in add baking soda, salt, and flour. Mix only until flour is incorporated....you should still see some flour marbled through the batter. Pour into loaf pan and make crumble.

Add all ingredients into a food processor and mix until butter is the size of small peas. Crumble over batter and bake for 1 hour.
