Baked Macaroni and Cheese

I made this recipe last year for Thanksgiving and it was a hit. I thought I'd pull it out of the archives for good measure! Enjoy!

I LOVE Macaroni and Cheese. Although not exactly "classic", Mac and Cheese exemplifies everything I like about cooking: It's simple and it's delicious! This recipe requires making a roux, which seems hard, but in actuality is super simple. Based on the Martha Stewart recipe, this mac and cheese recipe is simply delicious and robust.

Ingredients

  • 8 Tablespoons (1 stick)unsalted butter
  • 6 slices good white bread, crusts removed and pulsed into coarse crumbs in a food processor
  • 5 1/2 cups milk
  • 1/2 cup all-purpose flour
  • 1 egg yolk
  • 2 teaspoons salt
  • 1/2 teaspoon freshly grated nutmeg
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon cayenne pepper
  • 4 1/2 cups grated sharp white cheddar
  • 2 cups grated gruyere cheese
  • 1 pound elbow macaroni

Directions

Preheat oven to 375 degrees. Butter a 3-quart casserole dish; set aside. Place bread crumbs in medium bowl. In a small saucepan over medium heat, melt 2 tablespoons butter. Pour melted butter into the bowl with the bread; toss. Set the bread crumbs aside.

Warm milk in a saucepan over medium heat. Melt remaining butter in a high-sided skillet over medium heat. When butter bubbles, add flour. Cook, stirring for 1 minute. While whisking, add hot milk a little at a time to keep mixture smooth. Continue cooking, whisking constantly, until mixture bubbles and thickens, 8 to 12 minutes. Remove pan from heat. Stir in salt, nutmeg, both peppers, 3 cups cheddar and all of the gruyere. Stir and allow to cool slightly. Place egg yolk in a bowl and add one spoonful of cheese mixture and whisk until well blended. Add egg mixture to remaining cheese mixture and stir until well combined.

Cover a large pot of salted water, and bring to a boil. Cook macaroni for 2 to 3 minutes (the macaroni will continue cooking in the oven). Drain and run under cold water. Add macaroni to cheese mixture and combine. Pour mixture into prepared baking dish and spread until even. Sprinkle remaining cheddar cheese and reserved bread crumbs over top. Bake until golden brown, about 30 minutes. Serve and enjoy!

Easy and Delicious Croissants


I've always wanted to make croissants from scratch. I never end up making them however, because there are far too many steps, and chilling periods, and rolling, etc. for my taste. I like that they are classic, and I like making things from scratch, but they are certainly not simple!

So I was delighted when a reader pointed me to these frozen chocolate croissants! These croissants are my new pick for my on-going Best of Trader Joe's Product series of posts. The croissants come frozen, and all you do is place them on a baking sheet the night before you plan on baking them, let them rise overnight, and bake them in the morning! They are flaky and delicious. Michael and I had them with scrambled eggs and coffee! Yum!

On Why I Love The Barefoot Contessa

Simple and Classic

I have a soft spot for the barefoot contessa. I think she exemplifies what I love about cooking: simple, classic, elegant! I love that she makes classic recipes, with simple flavors, yet manages to make them elegant and sophisticated.

Her new cookbook, Back to Basics, is no exception. The book is chock-full of easy and delicious recipes, plus a whole series of tips on cooking and entertaining, making this a wonderful addition to her series of cookbooks. I'm definitely adding this one to my ULTIMATE COOKBOOK LIST!

Food Blog Award Winner!

I'm a winner! It must be food blog award season because tons of blog's are being honored for their hard work....and OTHAOAR is one of the lucky blogs to receive an award! We were honored to receive the Arte Y Pico award...it's an award honoring creativity and art, started by Arte y Pico blog, but the best part of this award is that it is given by other bloggers! I received this award from Kang over at London Eater...thanks Kang! The award comes with a couple of rules:

As an artist, I've always been more of a visual person, and this site is really made for people like me. If you're into the molecular gastronomy thing, then this site is for you! What I like the best, is that you can pick an ingredient and see which other ingredients share molecular flavor properties, which can then aide you in creating recipes! Genius. Check it out!

Walking in L.A - Nobody Walks in L.A?

Who walks in L.A? No one, right? That's what I thought, but since my recent move to Michael's centrally located Silver Lake cottage, I've been walking everywhere! L.A. is surprisingly walkable! Well, Silver Lake is walkable that is. I think that in L.A, we get used to getting in our car and driving two blocks...it's normal, it's what we're all used to. I always think about walking places but ultimately decide to drive. If I was in NYC, I wouldn't think twice about walking. So my new thing is to walk to places that I normally would drive to. Like last night. Simone, Michael and I got together at the Tiki Ti for some tropical cocktails. It took me 20 minutes to arrive. It was a beautiful, leisurely walk. Sure I could've gotten in my car and gotten there in about 10 minutes, but it was so worth not worrying about parking, DUI, etc. So, my new mantra is, if I would walk that same distance in New York, than I'm walking it here.
